
Ah Vermentino. The white wine for those of us who say we don’t like white wine. It’s got strong Sauvignon Blanc vibes but it’s not the same — it’s more herbal and minerally and just have a vibe of its own.
This Vermentino from Robert Hall in Paso Robles has peachy white flower notes and tangy minerality, sharp flavors. It’s a great bottle to enjoy in the bathtub (which I did), and also to enjoy with a lighter pasta dish.
I ended up pairing it with the tasty cacio e pepe raviolis from Trader Joe’s, which was a good call. The sharp flavors in the wine are a lovely match to the sharp parmesan in the raviolis, and the acidity is a great balance for marinara sauce.
